Mesquite is a legume that has been used as a staple food for centuries by the inhabitants of the desert and semi-desert areas of Mexico. It´s a bean pod, also known as the carob tree of South America.

It has a low GI (glycemic index) value of 25, and many nutritional benefits, which makes it a very suitable sweetener for those who have to control their blood glucose levels and need an extra energy supply.

Mesquite is obtained by grinding the bean pods in a process that maintains all its healthy properties. Perhaps the best is that it contains elements that help stabilize blood glucose levels, since its sugars consist of fructose and do not require insulin. Its soluble fibers such as galactomannin gum require 4 to 6 hours to be digested, three times longer than corn or wheat. Contains Quercetin, a phytochemical that has antidiabetic properties.
