Chickpeas are legumes very rich in fiber that help improve intestinal transit and slow the absorption of carbohydrates.

Fiber is essential because it also acts as a broom, facilitating the elimination of toxic substances from the colon. Chickpeas are a good source of proteins that contain valuable minerals such as phosphorus, iron, magnesium and extraordinary vitamins for the nervous system such as B1, B6 and B9.

Quinoa, considered a superfood, is a seed that is also very rich in fiber and protein, up to 23%.

It contains very important minerals such as calcium, iron, phosphorus, magnesium and vitamins such as C, E, B1, B2, B3. It is also a good source of essential fatty acids such as Omega 6. And finally, it has a very low glycemic index which makes it suitable for any healthy diet and even more so if you want to lose weight.

Finally, I have incorporated some vegetables such as zucchini, red pepper, green pepper and onion since they not only make it delicious and colorful, but also add a very good source of antioxidants, vitamins and minerals.

Chickpea burger ingredients

  • 400 gr. of cooked homemade or canned chickpeas.
  • 1 whole onion, chopped, 3 cloves of garlic, peeled and cut.
  • 1 whole carrot cut.
  • 3 tablespoons of raw grated tomato.
  • ½ teaspoon sea salt, ½ teaspoon sweet paprika, ½ teaspoon ground cumin.
  • 8 tablespoons spelled flour.
  • 2 fingers of water.
  • 2 tablespoons extra virgin olive oil.

Quinoa ingredients with vegetables

  • 1 cup of quinoa (wash well first with water).
  • 2 cups of water.
  • ½ red pepper cut into small pieces, ½ green pepper cut into small pieces, 1 zucchini cut into small pieces, 1 whole onion cut into small pieces.
  • A handful of strawberry basil cut into small pieces. You can also use dried basil if it is not fresh.
  • Olive oil.
  • Sea salt, black pepper.

Dressing

  • Extra virgin olive oil.
  • Juice of ½ lemon.
  • Tamari or organic soy sauce.

Preparation Chickpea burgers

  • First add oil to a frying pan and sauté the onion and garlic.
  • Add salt.
  • Add the grated carrot.
  • Add the spices and grated tomato.
  • Add 2 fingers of water and stir well.
  • Add the chickpeas and the sofrito to a bowl, mix well and blend with the hand mixer. Taste and see if you need to add more salt, according to each person’s taste.
  • Add 8 tablespoons of spelled flour and mix everything very well. Let it cool and place in the refrigerator for 45 minutes so that it acquires more consistency.
  • We take it out of the refrigerator and get ready to make the burgers.
  • Grease your hands with oil.
  • With 3 tablespoons of the preparation we will knead it giving a good round shape on the edges.

The good thing is that we can prepare it in advance and store it in the refrigerator. And before eating we will heat it in the pan until they are golden and ready to serve.

Quinoa preparation with vegetables

  • Wash the quinoa well and cook in twice as much water over low heat until it absorbs all the water very well. For 1 cup of quinoa there will be 2 cups of water.
  • Lightly fry the cut vegetables in a pan.
  • Add the vegetables to the quinoa and mix very well.
  • Add spices and salt to taste.

Dressing for quinoa

In a cup, mix the olive oil, lemon juice and Tamari or soy sauce very well.
