Pudding is a classic dish of English and American cuisine. It can be both a dessert and a salty or spicy dish as part of the main meal. Generally, a base of sponge cake, bread crumbs, semolina or rice bound with egg is used, and mixed with various fruits or other ingredients. Chia and flax pudding for constipation.

So today’s recipe is based on Chia seeds, flax and coconut milk or any vegetable milk of your choice as long as it does not have added sugar.

And these delicious seeds, in addition to helping us go to the bathroom, also have endless nutritional properties that are very beneficial for the body.

Did you know that chia, for example, is very rich in essential fatty acids Omega 3 and Omega 6 in the right proportion?

Well, this wonderful seed also contains proteins, antioxidants, flavonoids, minerals such as magnesium, calcium, boron and vitamins of group B. Chia seeds also contain mucilage, a plant substance that thickens in contact with any liquid, promoting an increase in fecal bolus, and therefore, facilitating evacuation smoothly and effectively.

Flax seeds are also another wonder of nature since they not only contain mucilage like chia, but they also contain lignans, a very particular fiber with very beneficial properties for the body.

Flax seeds also have Omega 3 essential oils in the form of ALA and GLA that help reduce inflammation. It contains vitamins and promotes hormonal balance.

So let’s get to work, this recipe is very simple and will not take more than half an hour.

Ingredients:

  • 3 tablespoons whole chia seeds
  • 1 tablespoon of brown flax seeds previously ground (with a coffee grinder, for example).
  • 1 whole ripe banana.
  • Coconut milk or any other vegetable drink of choice (no added sugar)
  • 1 teaspoon of coconut sugar or 1 tablespoon of date syrup.
  • ½ date cut into pieces, 1 handful of chopped walnuts.
  • 1 pinch of cinnamon

Preparation:

  • In a medium-sized bowl, add the ripe banana and mash it well until it becomes like a slurry.
  • Add 1 dessert spoon of coconut sugar or date syrup (the latter is my favorite and very easy to make at home. You will find many recipes on YouTube to do it).
  • Personally, I consider that homemade date syrup is the best way to naturally sweeten any dessert. It is delicious and also has very good nutritional properties.
  • Add ½ teaspoon of ground cinnamon powder.
  • Add the three tablespoons of flax and the tablespoon of ground brown flax seeds to the bowl. I personally choose brown flax seeds for their characteristic sweet flavor. You can use golden flax as well, but its flavor is not as pleasant for a dessert.
  • Little by little add the coconut milk or the milk of your choice until the seeds are well covered and stir well until you get a very homogeneous paste. I advise you not to add too much milk at once, go little by little until you get the texture you want since if you use too much liquid the pudding will not set as you would like.
  • Let it rest for half an hour in the refrigerator and take it out.
  • Place the pudding in glass jars used for yogurt. You could also use small glass glasses.
  • For topping I have chosen to put some slices of cut banana and some chopped walnuts and sprinkle a little cinnamon.

As you see, it is very simple. You can keep your pudding in the refrigerator and have it for breakfast or as dessert.
