Christmas probiotic truffles recipe

Today we are goint to share with  you three very easy-to-make recipes, homemade multicolored truffles that are delicious, nutritious and fun to prepare. You can even get your kids involved, as it’s a great activity! Plus, there’s no need for cooking since all the ingredients are raw and easy to find. It’s a healthy way to introduce sweets during Christmas time or any other celebration. Christmas probiotic truffles recipe.

Christmas probiotic truffles recipe

Santa Claus Truffles

For this récipe we´ve chosen only 6 ingredients:

  • 1 fresh beetroot, peeled and chopped into small, medium/large pieces. Fresh beetroot gives a beautiful color and has countless health benefits: it’s rich in vitamins and antioxidants, helps improve blood circulation due to its nitric oxide content, and is very popular among athletes for enhancing performance. It contains iron, beneficial for anemia and its high fiber content makes it an excellent prebiotic that aids digestion. In addition, it supports liver detoxification.
  • ½ cup of walnuts, a nut high in essential Omega-3 fatty acids.
  • 6-8 large Medjool dates, pitted and soaked for at least 6 hours (you can speed up the process by soaking them in warm water). Drain them well afterwards.
  • 2 tablespoons of shredded coconut.
  • 1 tablespoon of coconut oil.
  • 1 teaspoon of vegan kefir powder. Kefir powder helps restore a lasting balance in gut microbiota, reduces inflammation, and boosts the immune system.

Preparation:

  1. Place all the ingredients in a food processor or blender and blend until a sticky dough forms, suitable for rolling into balls (not too small nor too big).
  2. When shaping the balls, I recommend wearing gloves to avoid staining your hands red.
  3. Roll the truffles in shredded coconut.
  4. Place them on a tray and chill in the fridge for 30 minutes to 1 hour to firm up.

You’ll see how delicious they are!

Raw Vegan Truffles with Cacao

For these truffles, I also chose 6 ingredients:

  • 6-8 Medjool dates, pitted, soaked for about 6 hours, and well drained.
  • ¼ cup of pecans, which are rich in antioxidants, polyunsaturated essential fatty acids, vitamin E, and selenium.
  • ¼ cup of raw almonds with skin, perfect for maintaining blood sugar levels. They are highly alkalizing due to their antioxidant content and minerals like calcium and vitamin E.
  • A dash of liquid vanilla extract, especially for baking (easily found in most supermarkets).
  • 2 tablespoons of raw cacao powder.
  • 1 heaping teaspoon of vegan kefir
  • A pinch of salt to enhance the flavor.

Preparation:

  1. Chop all the ingredients first and add them to the processor. Mix well until a thick, moldable dough forms.
  2. I recommend not blending everything too finely so that you can enjoy the crunchy bits of nuts.
  3. Shape the dough into balls and coat half of them in raw cacao powder and the other half in shredded coconut.
  4. Freeze for 3 to 4 hours, and they’re ready to serve.

You’ll be licking your fingers!

 

Tropical Truffles with Banana and Coconut

Finally, these tropical truffles offer a delicious flavor and beautiful color.

  • 1 large cup of rolled oats, rich in fiber and great for digestion. Oats also contain many minerals such as manganese, phosphorus, magnesium, potassium, calcium, zinc, iron, and vitamins.
  • 1 large ripe banana, which is packed with vitamins and minerals that help prevent anemia.
  • ½ cup of raisins, soaked for at least 4 hours (soak them in warm water to speed up the process). Drain well afterward.
  • ½ cup of shredded coconut.
  • 1 teaspoon of vegan kefir
  • ½ teaspoon of ground cinnamon.

Preparation:

  1. Mix all the ingredients in a food processor until you get a thick consistency that’s easy to mold.
  2. Shape the mixture into balls and roll them in shredded coconut.
  3. Chill in the fridge for at least an hour and they’re ready to eat!
