It is important to keep in mind that in summer we sweat more, we lose essential electrolytes, minerals through the skin that we must replace, not only with alkaline water, but with typical summer foods. It is no coincidence that, in summer, nature provides us with very specific fruits and vegetables with a high content of water, minerals, vitamins and enzymes. During this time, we seek to refresh ourselves, but it is also important to maintain a healthy diet to receive all the nutrients and stay hydrated and well nourished.
1. Alkaline ice cream
If you like ice cream you can always opt for the ultra-healthy and delicious version with fresh fruits like banana and mango that provide a very creamy texture.
- Peel 2 bananas and chop them.
- Peel a ripe mango and chop it.
- Chop 2 pitted Medjoul dates (soak them for 2 hours beforehand).
- 1 glass of coconut milk.
Preparation:
- Place all the fruit pieces in the freezer and when they are frozen, take them out and add them to a processor along with the coconut milk.
- Beat it well until you get a homogeneous and creamy paste and you have your super ice cream ready to serve.
2. Salmon, apple and egg salad
This is a very refreshing, nutritious and easy to prepare salad ideal for the whole family.
For this salad you will need:
- ¼ lettuce (whatever you prefer) cut into thin strips
- 1 avocado cut into cubes
- ½ red onion, sliced very thinly
- 125g smoked salmon, cut into strips
- 1 tablespoon capers (optional)
- 2 or 3 sprigs of dill
- cut very fine
- 1 packet of fresh feta cheese cut into cubes.
- 2 chopped hard-boiled eggs.
Mix all the ingredients in a large bowl and add the dressing.
For the dressing you will need:
- 6 tablespoons extra virgin olive oil
- 2 teaspoons Dijon mustard
- Juice of half ½ lemon
- 1 handful of salt
*Mix the ingredients in a small bowl until you get a homogeneous sauce.
3. Old-fashioned gazpacho
This is a very interesting recipe since it is similar to a salad, however it is also like 1 gazpacho.
For the gazpacho you will need the following ingredients:
- 4 large ripe tomatoes with or without skin, cut into small squares.
- ½ green Italian pepper cut into small pieces.
- 1 red pepper cut into small pieces.
- 1 peeled cucumber cut into small pieces.
- 1 sweet onion cut into small pieces.
- 1 clove of garlic, minced.
We add everything to a large bowl and season it.
Dressing:
- 1 teaspoon salt.
- 50 ml extra virgin olive oil
- 1 teaspoon ground cumin.
- 15 ml of vinegar.
- 1 tablespoon of oregano.
- 1 glass of alkaline water.
Mix everything very well and serve in a small bowl. You will see what a delight.
4. Cold rice salad
The following recipe will be a guaranteed success. For this recipe we are going to need the following:
Ingredients:
- 200 g of cooked long rice.
- 150 gr of organic cooked corn.
- 2 chopped hard-boiled eggs.
- 1 avocado cut into cubes.
- 1 red onion cut into small pieces.
- 1 Italian pepper cut into small pieces.
- 1 red pepper cut into small pieces.
- 1 salad tomato cut into small pieces.
- 60 gr. natural tuna.
- 60 gr. of pickled gherkins cut into thin slices.
- 60 gr. of olives.
- Extra olive oil, salt, vinegar and mustard.
We add everything to a bowl and season it. Let it cool in the refrigerator for at least 1 hour and serve. Super simple, right?
