Carrot and cauliflower rice rolls

Spring is the ideal time to purify our body. To help our body detoxify and eliminate toxins, it is advisable to include plenty of raw vegetables in our alkaline diet, foods rich in chlorophyll (green leafy vegetables) and drink plenty of alkaline water. That’s why today we bring you a new spring recipe:  Enjoy these carrot and cauliflower rice rolls!

Carrot and cauliflower rice rolls

Today’s alkaline recipe is very purifying, since citrus favors the dissolution of mucous plaques and toxicity embedded in the body, avocado ensures the necessary contribution of healthy fats and the rest of the ingredients are live foods, that is, raw. or lightly cooked.

Ingredients

For the cauliflower rice

  • ½ white cauliflower
  • 1 bunch of cilantro sprigs
  • Zest of 1 lime
  • The juice of ½ lime
  • 1 and ½ avocado, at its point
  • 1 pinch of Himalayan salt
  • Optional: if you want a more satiating and less cleansing recipe: 1/2 block of smoked tofu.

 For the citrus carrot slices

  • 2 large carrots
  • The juice of 1 lemon
  • The juice of ½ orange
  • 1/4 olive oil
  • 1 tablespoon soy sauce

Steps to follow

  • Wash the carrots well. If they are not ecological, better peel them.
  • Boil the lemon juice, orange juice, olive oil and soy sauce in a pot.
  • Fillet the carrots with a mandoline, vertically. The sheets should be approximately 3mm.
  • Place the carrots in the pot, lower the heat and let them cook slowly. They will be ready in about 7 or 8 minutes.
  • While the carrots are cooking, wash the cauliflower well. Next, chop with short pulses until the cauliflower is in small pieces.
  • Transfer the “cauliflower rice” to a large bowl and add the avocado, lime zest, lime juice, pinch of salt and chopped cilantro. Mix well.
  • Once the carrot slices are poached (they should be soft but turgid), remove them from the pot and let them cool.
  • If you are going to include smoked tofu in the recipe. It’s time to cut it into strips of approximately 0.5 cm and grill it.
  • Spread a sheet of carrot on a smooth surface and then, with a spoon, place the cauliflower rice on top and then a sheet of tofu. Roll and place in such a way that the final end of the roll is underneath, resting on the plate, so that it does not open.
  • Repeat the operation with the rest of the sheets.

Preparation time

30 minutes.

Result

15 units.
