Vegan Avocado and Chocolate Cake
For this recipe, we´ve chosen Medjool dates as they not only provide a subtly exquisite sweetness but also offer impressive nutritional qualities like vitamins A, C, E, and B-complex vitamins.
They contain minerals like potassium, magnesium and calcium, which help relax the nervous system, as well as copper, zinc, selenium, phosphorus, iron, and soluble fiber. Dates are also a source of healthy carbohydrates.
Nuts such as hazelnuts and walnuts are rich in fiber, iron, phosphorus, folic acid, alkaline minerals like calcium and magnesium and B vitamins. Walnuts, in particular, help prevent cardiovascular diseases and are anti-inflammatory due to their omega-3 content. They also support the nervous and immune system.
This cake also includes avocado, a source of healthy fats, high in vitamin E and minerals. It’s ideal for pregnant women, athletes, and children, as it promotes relaxation of the nervous system and good cardiovascular health.
And lastly, but certainly not least, we have cacao, rich in magnesium—who doesn’t love chocolate? Did you know, for example, that cacao helps reduce inflammation and the risk of diabetes? Not only that, cacao improves memory and focus, provides energy, boosts mood, and what better way to spend the holidays than with a cheerful spirit, alone or in company!
Ingredients for the Base:
- 190 g of nuts (half hazelnuts, half walnuts, but you can also use others if you prefere)
- 8 Medjool dates (previously soaked for at least 1–2 hours)
- 1 teaspoon of extra virgin coconut oil
- 1 pinch of salt
- 1 tablespoon of pure raw cacao powder
Ingredients for the Topping:
- 2 avocados
- 14 pre-soaked dates
- ½ cup of extra virgin coconut oil
- 1 teaspoon of vanilla extract, preferably unsweetened. You can easily find this in supermarkets or health food stores.
- 80 g of pure raw cacao powder
- 1 pinch of salt
Preparation of the Base:
We’ll start by preparing the cake base. You’ll need a 20 cm springform pan and some parchment paper. Cut the paper to fit the bottom of the pan.
Add to the food processor:
- Nuts
- Pre-soaked dates
- Coconut oil
- Pinch of salt
- Cacao powder
Blend everything well but not completely, so there are still some small pieces of nuts to give it a crunchy texture. Spread the mixture evenly across the base (bottom) of the pan. Place in the fridge for at least half an hour to solidify while you prepare the filling.
Preparation of the Filling:
- 2 large peeled avocados.
- Dates
- Cacao powder
- Pinch of salt
- Vanilla extract
- Coconut oil
Blend well until you get a smooth mixture. Take the pan out of the fridge; the base should now be hard enough. If it’s still a bit soft, chill it for another 15 minutes mote. Spread the topping over the base evenly with a silicone spatula. Place it back into the fridge and let it chill for 1 hour until fully set. Unmold and decorate with fruits like berries, blueberries, raspberries, strawberries, and a few mint leaves.
And it’s ready to serve!
