Another important aspect of this recipe is that all the ingredients are raw what makes it even more nutritious and rich in vitamins, amino acids, enzymes, minerals, etc. It’s important to understand that cooking at temperatures that exceed 45°C (113°F), all these good elements that nourish our cells begin to break down. When we eat overly cooked foods they lose their nutritional qualities and what we consume resembles something more dead than alive.

Additionally, the more we cook something, the more acidic it becomes, partly due to its loss of electrons and vitality. An example is asparagus, which is highly alkaline, but if we cook it  no matter how good it tastes, it will lose its alkaline power in the body. So, to get the maximum benefits from an alkaline diet it’s advisable to cook the least as possible. Now, let’s move on to the recipe:

Ingredients

  • 1 Broccoli
  • Raw almonds 100g
  • 2 ripe Avocados (neither too hard nor too soft)
  • 1 Garlic clove
  • Extra virgin olive oil
  • 1/2 lemon juice
  • 2 or 3 tomatoes (any variety)
  • 2 or 3 spring onions, including the green tops
  • A handful of fresh basil leaves

Preparation

First, break the broccoli into small pieces, as shown in the photo. You can do this manually with a knife or use a food processor. Ideally, don’t grind the broccoli completely; it should still have some crunch when eaten. It should be small enough to be bite-sized, but not so tiny that it loses its crispness.

Next, grind the 100g of raw almonds in a food processor until you get a “fake cheese” texture. Once ready, mix it well with the chopped broccoli and set them aside in a bowl while you prepare the avocado sauce.

Open and pit the two avocados, peel and chop the garlic clove and squeeze the juice of half a lemon. Place everything in a bowl to blend with a hand blender or food processor. As you blend slowly add a drizzle of olive oil and a pinch of Himalayan or natural sea salt.

Both avocado and lemon have wonderful health benefits, truly making this dish an embodiment of what Hippocrates said over two thousand years ago: “Let food be thy medicine, and medicine be thy food.”

Once the sauce is made, it will have a strong flavor, but when mixed with the broccoli it softens. Ideally, let it marinate for 4 to 5 hours before serving it so that the lemon can soften the broccoli slightly, creating a “cooked” effect.

When the main dish ready, prepare the tomatoes by washing and chopping them. Mix them with the chopped spring onions and sliced basil leaves. Dress the mixture with olive oil, salt and any herbs you like, such as oregano.
