Ingredients
- 4 artichokes.
- 1 bunch of fresh parsley.
- 3 garlic cloves
Ingredients for the vinaigrette
- ½ red pepper chopped very small.
- ½ green pepper chopped very small.
- ½ yellow pepper, chopped very small (if you can find it).
- 2 cloves of raw garlic, chopped very small.
- 1 red onion chopped very small.
- Some small chopped fresh parsley.
- Juice of 1 lemon.
- Apple vinager.
- Sea salt.
Artichoke preparation
- We will use the whole artichokes.
- Wash and cut only the flat base of the trunk so that they can stand upright in the pot. We peel the trunk and we will also use it. Many people throw away the trunk because they don’t know that it is also very delicious.
- Chop the garlic and fresh parsley.
- Tap the tips of the artichokes several times until they open like a flower.
- Place the 4 artichokes in a pot with 1 inch of water, make sure they are standing, season with salt and a splash of extra virgin olive oil.
- Place the garlic and chopped parsley inside the artichokes.
- Bring to a boil and then cover and simmer over low heat. It is important to keep an eye so that all the water does not evaporate.
- After 15 or 20 minutes we take a look and prick it with a fork. If we see that they are still hard, we leave them for a few more minutes. You also won’t want them to be overcooked.
- At the end we raise the temperature of the heat so that all the excess water evaporates so that they maintain all the flavor. Watch so they don’t burn.
- Remove from the pot and place on a tray.
Vinaigrette preparation
After having chopped all the ingredients very well, place them in a bowl. Then add the oil, lemon, apple cider vinegar, salt and pepper.
Mix very well and it is ready.
