We want to share this alkaline recipe full of alkalizing ingredients, easy to make, nutritious and healthy. Zucchinis are fantastic in the summer, so take advantage of the variety available at the market and pick your favorite. For this recipe, we’ve chosen the lighter-colored zucchinis. Stuffed zucchini with quinoa and vegetables
This is a very complete dish, so with just half a stuffed zucchini will be enough to satisfy your appetite. You can serve it with a salad, a cold soup like gazpacho or a green soup.
Quinoa is a wonderful pseudocereal, packed with benefits, incredibly versatile, and delicious.
Ingredients:
- 2 zucchinis
- 100g quinoa
- 1 handful of cherry tomatoes
- 1 bunch of asparagus
- ½ spring onion
- 4 thinly sliced radishes
For the sauce:
- 1 mango
- 1 spring onion
- 4 dried tomatoes (rehydrated)
- Juice of half a lemon
- 1 sprig of parsley
- 1 handful of hemp seeds
- Pinch of Himalayan salt
- 1 tablespoon extra virgin olive oil (EVOO)
Steps to Prepare Stuffed Zucchini with Quinoa and Vegetables:
- Place 100g of quinoa in a saucepan with double the amount of water. The rule for cooking quinoa is simple: always use twice as much water as quinoa. Cover and cook until the water has been fully absorbed.
- While the quinoa is cooking, wash the zucchinis (courgette) and cut them in half. Scoop out the flesh to make the zucchinis hollow enough for stuffing. Set aside.
- Chop the vegetables and the zucchini flesh into small pieces and place them in a large bowl. Once the quinoa has cooled down, add it to the bowl and mix everything well. You can add a bit of salt if you like, though I don’t think it’s necessary since the sauce is already flavorful.
- For the sauce, place the peeled and chopped mango in a food processor along with the spring onion, rehydrated dried tomatoes, lemon juice, parsley, hemp seeds, salt, and olive oil. Process until you get a smooth, lump-free sauce. Taste and adjust the salt if needed. You can also add a splash of alkaline water for a lighter texture.
- Now it’s time to assemble the zucchinis! Stuff the zucchinis with the quinoa and vegetable mixture and drizzle a little sauce on top. Alternatively, you can mix the sauce into the quinoa and vegetables before stuffing the zucchinis—it’s up to you! I prefer serving the sauce separately so everyone can add as much as they like.
