Papaya and liquid chlorophyll lassi

Lassi is a traditional Indian drink made from yogurt. It’s popular throughout the country, though it originated in Punjab. Lassi is typically served cold due to its refreshing qualities. The salty version is known as “traditional” lassi and is seasoned with cumin, pepper, and other spices. Discover this new recipe: papaya and liquid chlorophyll lassi.

Papaya and Liquid Chlorophyll Lassi

Papaya is a sweet fruit, but what sets it apart from others and the reason why we recommend it is because it contains papain, an enzyme that aids digestion, particularly useful when eating foods that are difficult to digest like proteins, for example.

Similarly to pineapple, which is rich in bromelain that helps break down proteins just like pepsin (an enzyme found in our gastric juices), papaya is a natural digestive aid.

As a general rule, it’s best not to overconsume fruit because of its high fructose content. If you do the ideal time would be between meals to avoid causing fermentation in the stomach.

Papaya seeds are edible and can be added to recipes. They have a strong flavor but also boast interesting properties. In fact, in some countries, they are ground and used as a substitute for black pepper. So, when you peel and remove the seeds from the papaya, save a teaspoon of its seeds to add later to your papaya and chlorophyll lassi récipe as long as the papaya is organic, otherwise skip this step! Remember that pesticides and herbicides are mainly found in the skin and seeds of fruits.

As an additional suggestion for green lovers, you can pair this delicious papaya lassi with a little green juice. We’ve also added a few drops of liquid chlorophyll for an extra boost of alkalinity. If you want to skip the green juice, you can  chlorophyll directly to the papaya lassi. It’s up to your preference.

Ingredients (serves 4):

  • 400g of papaya, peeled and chopped
  • 250ml almond milk
  • 250g green coconut yogurt.
  • 1 teaspoon of papaya seeds
  • 1 teaspoon of ground cardamom
  • Optional: rose petals or mixed dried flowers. Some versions of the recipe include rose water, which adds a fragrant aroma and delicate flavor. If you have roses, toss a petal or two into the blender.

How to prepare your Green Juice with Chlorophyll:

  • 1 head of lettuce
  • 1 apple
  • 2 sprigs of mint (leaves only)
  • 5 drops of liquid chlorophyll

Instructions:

  1. Add all the lassi ingredients to the blender and process until you achieve a smooth, creamy texture without lumps.
  2. Pour the mixture into small glasses and refrigerate.
  3. Meanwhile, make the green juice, adding 5 drops of liquid chlorophyll and mixing well.
  4. Take the glasses out of the fridge and pour a little green juice over the papaya lassi layer.
