About Broccoli
Broccoli is the main ingredient of this recipe as it´s one of the stars of alkalinity. It´s part of the cruciferous family, broccoli is packed with minerals and vitamins, notably high in iron and phytonutrients. It’s also rich in vitamins A, C, E, calcium, folic acid, and potassium. It has phytochemicals, vitamins, and minerals that gives it digestive, anti-anemic, detox and immune-boosting qualities among other benefits.
How to Choose the perfect Broccoli:
When buying broccoli choose the one that is firm with a vibrant green color. One of the first signs of degradation or chlorophyll loss is when the vegetable starts to yellow.
Preparing the Creamy Detox Vegetable Soup
Ingredients
- 1 garlic clove, minced
- 2 celery stalks, chopped
- 1 broccoli, florets only
- 1 liter of vegetable broth
- 1 handful of fresh mint
- 1 teaspoon olive oil
- 1 fresh fennel, finely sliced
- Himalayan salt
Instructions
- Heat the olive oil in a pot.
- Add the minced garlic, fennel, and celery and cook for a couple of minutes.
- Add a splash of vegetable broth and the broccoli florets. Cover and cook for 2-3 more minutes over medium heat to steam the broccoli slightly, just enough to soften it without losing nutrients. After that, add the remaining broth and let it warm up.
- Transfer everything to a blender, add the mint (reserving a few leaves for garnish), and blend until smooth.
- Serve, garnishing it with mint leaves, chia seeds, and almond ricotta.
Almond Ricotta. Ingredients
- 1 handful of activated almonds (soaked for 8 hours and peeled)
- A splash of lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon nutritional yeast
- 1 cup oat cream
- A pinch of Himalayan salt
Instructions
- Place all the ingredients in a blender, starting with the liquid ones to help the blades work smoothly.
- Blend in short pulses until a thick, slightly chunky cream forms.
- Serve in a separate bowl to accompany the broccoli soup.
