Fatty acids are naturally part of oils and fats. Chemically, we can divide them into three groups: monounsaturated, polyunsaturated and saturated. The latter come mainly from foods of animal origin (meat, sausages, cheese, etc.) and their consumption has little positive effect or impact on our state of health. However, both monounsaturated and polyunsaturated fatty acids come mostly from the plant kingdom and these are not only necessary but also essential for the proper functioning of the body. These are involved in numerous processes for which they are essential, such as the assimilation of fat-soluble vitamins, the functioning of the nervous system or hormonal regulation.
