Healthy Christmas Polvorones

The countdown to Christmas has begun. For some time now, supermarket shelves have been filled with holiday treats—nougats, king cakes, polvorones (here in Spain). The options are plentiful and increasingly diverse, but most are ultra-processed. They contain a significant amount of sugars and trans-fats, so if you want to take care of yourself during the holiday season without giving up traditional Christmas treats, here’s a recipe for healthy Christmas polvorones.

Healthy Christmas Polvorones

Ingredients:

  • 1 cup of ground almonds
  • 1/2 cup of tiger nut flour
  • 1/4 cup of coconut milk powder
  • 1/8 cup of yacon syrup or coconut sugar
  • 6 drops of liquid stevia
  • 1/8 cup of coconut oil, in liquid form
  • 1/2 teaspoon of matcha tea powder
  • A pinch of Himalayan salt

For the coating

  • 1/2 cup of coconut butter
  • 1/4 cup of raw cacao powder
  • 1/4 cup of yacon syrup
  • 4 drops of liquid stevia
  • A pinch of powdered vanilla
  • 4 tablespoons of coconut oil

Procedure for Your Healthy Christmas Polvorones

  1. Place the coconut butter in a double boiler over low heat to melt it without overheating it.
  2. Put the dry ingredients for the dough in a bowl and mix well with a spatula until smooth and lump-free.
  3. Add the coconut oil and yacon syrup. Stir again until a moldable dough forms.
  4. Divide the dough into equal portions and shape them into small balls.
  5. Use a cookie cutter (in this case, a star shape) to mold each portion and press it down on the work surface.
  6. Carefully remove the cookie cutter, pressing the dough against the surface.
  7. Repeat the process with all the dough balls. Place them in the freezer.
  8. Once the coconut butter has melted, add the remaining coating ingredients and mix well until smooth.
  9. Remove from the heat and let it thicken slightly.
  10. Dip half of each polvorón into the coating and lift, holding it in the air for a couple of seconds until it solidifies. Make sure they are well chilled for the coating to harden quickly.
  11. Place them on parchment paper and repeat with the remaining polvorones.
  12. Decorate with superfoods on top if desired.

*Store in a cool, dry place inside a glass jar. You can also keep them in the refrigerator.
